The list of tasks a Restaurant Captain is suppose to perform in different work shifts.

Morning shift of Restaurant Captain

1.    Get actual in-house guest list from FO

2.    Assist servers/runners setting up tables for breakfast

3.    Brief team (if applicable)

4.    Check reservation for packages, special requests, room service orders etc

5.    Last check of every table (whipping and set-up)

6.    Brief hostess for special reservations, packages etc (If applicable)

7.    Assist waiter setting up tables for lunch

8.    Last check of every table (whipping and set-up)

9.    Close shift, complete logbook, void report, collect breakages

10.                       Print all POS reports

 

Afternoon shift of Restaurant Captain

1.    Brief team

2.    Check reservation for packages, special requests, room service orders etc

3.    Check if laundry has arrived/returned

4.    Check if sugar pack holders, coffee & tea station is refilled

5.    Set tables for dinner service

6.    Check reservations & packages

 

Evening shift of Restaurant Captain

1.    Lead briefing

2.    Last check of every table (whipping and set-up) (If applicable)

3.    Close shift, complete logbook, void report, collect breakages

4.    Print all POS reports

5.    Check if sugar pack holder refilled

6.    Close shift, complete duty manager report, void report, collect breakages

7.    Print all POS reports

Overall assignments:

1.    Take orders

2.    Take room service order (If applicable)

3.    Laundry delivery

4.    Maintenance follow ups

5.    Storeroom Requisition

6.    Food and Beverage presentation and freshness of products

7.    Refilling of stationeries, PAR stocks, inventories

8.    Remark: Captain of every shift is responsible that the tasks of the GSA’s are followed accordingly
